There are two species of lobster that live in the Galapagos. The red shell ones, Panulirus Pencilatus & a green shell lobster, Panulirus Gracilis.
As you can see in the photos, the quality of the lobsters, Red and Green shell, are exceptional
There is a cold water current running through these waters, so the lobster tails have taken on their own unique coloration. Also the eating quality is one step up from a normal warm water tail.
Note, ***The belly of the lobster shell can be black! Usually this means a lobster is bad quality – this is not the case. These lobsters after living for a million years on volcanic soil have taken on this unique black belly color.
